The key physiological events of malting, which determine the quality of the final malt, include rapid and uniform germination, the synthesis of hydrolytic enzymes in the scutellum and aleurone tissues surrounding the endosperm and finally the degradation of endosperm cell walls, described as modification. Gibberellin, which regulates these physiological events, is a plant hormone produced by the germinating embryo. |
